That still doesn't explain why have the wheat far away and using up a cart for that task is better than just having it right outside.

Depends on logistics related to water, soil, and the current position of the wheat fields. Ideally, I like to see villages with a "work triangle" setup so all the necessary components for pie-making and composting are within easy reach of each other. Bakery near sheep pen and wheat. Carrots and berries near sheep pen. Compost piles close to established fields and water.
But the reality is that, in many villages, the bakery is adjacent to the berry patch and forge, because these three locations form the center of the early camp. Other farms and the sheep pen get added later, sometimes in weird places. You don't NEED the bakery next to berry patch. And you technically don't need the bakery near the forge - although they frequently share the central fire for a long time, so having them near each other (but not too close) is at least understandable.
One nice thing about setting up the wheat field away from the bakery - floor clutter. Wheat doesn't leave behind hard rows but it DOES tend to leave behind a lot of piles of wheat. Setting up the wheat fields right next to the bakery can clutter up area that might be better cluttered up with mutton/rabbit meat. Only so many empty spaces in a busy village, after all. You only need one bowl of flour for a set of pies, but you need four pieces of meat. Might as well have them close by and travel for the wheat bowls.
